My son-in-law has been trying to replicate (for years) a childhood favorite his mother made – milk pie! We all laughed and teased him until I found this delicious version which I'm sure is destined to become a family tradition. My Grandma Mary would always make me a milk pie if there was left over crust just for me. I could never find one as she would just pour the milk in the crust, sprinkle sugar and flour in, mix all the ingredients gently in the pie crust with a dainty thin "spatula" and then dot with butter and bake in her coal cookstove.

  1. Take 2 l full fat milk
  2. Take 250 g semolina
  3. Prepare 4 eggs
  4. Get 250 g margarine
  5. Take 2-3 tsp vanilla essence
  6. Prepare 1/2 cup sugar
  7. Prepare 1/2 kg phyllo pastry

Whisk until all ingredients are thoroughly combined. Cook over medium heat, stirring constantly, until mixture is thickened. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.

Steps to make My grandma's milk pie:
  1. Place the milk, semolina, margarine and sugar in a saucepan.
  2. Bring to boil, while stirring constantly.  You should be left with a thick sauce, of pouring consistency.  Remove from the heat.
  3. In a separate bowl, beat the eggs with the vanilla essence, and then stir them in the milk sauce.
  4. Thoroughly brush a large ovenproof dish with melted margarine.  Layer half the phyllo sheets to cover the base and sides of your dish, making sure to brush each sheet well with melted margarine first.
  5. Pour the filling in. Roll the edges of the phyllo pastry to create a crust around the pie. Brush the crust with melted margarine.
  6. Bake in a preheated oven, 180°C, for approximately 1 hour, until golden.  Dust liberally with ground cinnamon, and proceed to… devour!!

Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Combine sugar, flour and cocoa in saucepan. Stir in milk and cook over medium heat until thick. Remove from heat and temper in egg yolks.
