Steps to make Chocolate Truffle pops:
  1. Line a Baking sheet with Butter paper.
  2. In a Medium stainless steel combine the Chocolate chips and Heavy cream.
  3. Set the bowl over a sauce pan of barely simmering water and stir occasionally until the chocolate has melted and the mixture is smooth, about 5minutes.
  4. Refrigerate the chocolate mixture until very firm, about 2 hours.
  5. Using a round table spoon measure scoop into 18 round pieces and arrange on the prepared baking sheet.
  6. Working quickly,with dry hands,Roll the mixture into balls.
  7. Put a papaya stick into each ball and freeze,Stick side up until firm, about 30minutes.
  8. For Chocolate coating:Add 2 cups of Choco chips to a medium stainless steel,set the bowl over a saucepan of barely simmering water and stir occasionally until the chocolate has melted.About 4 minutes.
  9. Dip the pops in the melted chocolate allowing the excess Chocolate to drip off and then Sprinkle the colour balls as a topping.
  10. Arrange the pops, Stick side up,on the baking sheet.
  11. Refrigerate for 30 minutes until the chocolate has set.Let the Truffle pops stand at room temperature for 15 minutes before serving.Store them in airtight container.

These truffle pops are easy to make and so delicious! We thought they were the perfect recipe for the kids to make. Today I'm a very special guest … Save leftover chocolate by scraping it into a zip-top sandwich bag to re-melt and reuse again for drizzling or dipping other desserts.
