Steps to make Pudina rice:
  1. Wash and soak the rice in water for atleast 2-3 hours.
  2. Heat a pan. Add oul or ghee. Now add bay leaf, red chilly, jeera and saute for few seconds. Add cardamom, cloves, cinnamon stick, chopped garlic. Saute for few seconds until garlic is roasted nicely. Now add kasuri methi and saute for few seconds. Now add chopped onion and saute for few more seconds, put the gas flame low during this whole process. Now add ginger paster and saute for few seconds. Add chopped pudina and coriander leaves.
  3. Add soaked rice and mix well. Now add 2 cups of water (double the quantity of rice). Add salt and sugar. Keep on high flame to boil. Once the water from the above is soaked, turn the gas flame to medium and keep for 5 minutes to cook. After 5 minutes switch up off the flame. Cover and keep it cover for another 5 minutes.
  4. Delicious and healthy pudina rice is ready. Serve with raita.
