Steps to make Pudina Kaju Pulao:
  1. Wash and soak rice for 30 minutes before cooking.
  2. Add mint leaves and green chillies in a mixer jar. Make a fine paste and keep it aside.
  3. Heat oil in pressure cooker, once the oil is hot add the black cumin seeds and all it to splutter
  4. Add finely sliced onion and cook till they become light brown.
  5. Now add ginger garlic paste and turmeric powder. Cook till the moisture from the paste gets evaporate.
  6. Add blended paste, mix and cook till oil gets separated from it
  7. Now add whole spice powder and season with salt according to taste. Mix and cook for 2 minutes. - Add two cups of water, mix and cook till it comes to boiling.
  8. Drain and add soaked rice. Mix and cover the pressure cooker, cook till you get 3 whistles. Switch off the gas and allow the pressure gets subside.
  9. Now the dish is ready can be served with dahi raita

But this time, my pulao turned out so good that I was tempted to post it :). I picked the basic recipe from Mrs. Chandri Bhat's collection on Bawarchi and made a few modifications according to my taste. Its best to serve this kaju pulao with a shorba or any side veg gravy. It also goes well with paneer based gravies like palak paneer, paneer butter masala, paneer lababdar.
